Now I don’t know about anyone else but in my opinion bacon in almost any recipe is great and you can’t go wrong. Today’s recipe comes from a wonderful site called Two Spoiled Cats . This site I just love.
Ten Eggs (important ingredient in an omelette!)
1/3 cup milk
1/2 teaspoon salt
4 dashes hot pepper sauce, or to taste
1/2 pound bacon – cooked, and chopped into bite – size pieces
1 (4 i) can black olives, drained
2 roma (plum) tomatoes, chopped
1/4 cup green onions, chopped
1/3 cup mushrooms, sliced
3/4 cup Colby – Monterey Jack cheese, shredded
Preheat oven to 350 degrees F (175 degrees C). Coat an 8 inch square baking dish with non – stick cooking spray.
In a large bowl, combine eggs and milk. With an electric mixer, beat until frothy. Blend in salt and hot pepper sauce. Stir in bacon, olives, tomatoes, green onions, mushrooms and cheese. Pour into prepared pan, and cover with lid or aluminum foil.
Bake in preheated oven for 40 to 50 minutes, or until eggs are set in the center.
If there is an ingredient you either don’t like or want in your River Omelette DON’T PUT IT IN!! It’s that easy. As for the cheese if you prefer American, Provolone, Swiss or some other cheese instead of Colby – Monterey Jack cheese please feel free to use it. As we all know THAT the bacon is the most important ingredient then the eggs. Now maybe you’ll try it for Breakfast, another meal or even serve your mother Breakfast in bed.
The picture below is of an actual Bear my uncle shot many, many years ago. This is the Bear head. It was passed down to my Dad after my uncle died. He was into hunting. There is nothing fake about this Bear. I can’t tell you how old this bear is because I don’t know. But trust me, he’s old. Also, you see below the Bear head is part of an old clock. Like the Bear Head I have no idea how old the clock is either.

Hi everyone and a big welcome to you. Also a Very Happy Easter to you too.I wanted to do something very special for Easter so I decided to write a poem and create a puzzle for you to do. I hope you like it.
WHY JESUS CAME TO EARTH
Jesus came to earth knowing what
His Father’s will was for Him
To do but He came to
Earth anyway. For many Years He
Taught about his Father and the
Only way to get to Heaven
Is through Him. While on His
Journey and mission He taught many
People but even though they heard
Him teach the Truth, some of
Those people tested and tried Him
But He always prevailed and we
See that in the miracles He
Performed. When Palm Sunday came
And the people layed palm branches
on the road and was all for
Following Him until Pilate gave the
People a choice to crucify Him or
Let Him live. The people chose
Crucify Him. He knew this was
His mission to accomplish all along
And He still remained Silent. Why
Did He remain silent? He remained
Silent because He knew His mission
Was to save us from our sins
And to do that He had to die
On the cross and on that third
Day, He arose from the dead and
ascended into heaven and sitteth on
The Right hand of His Father
And reigns With His Father in
Heaven. So why Did Jesus come
To earth? To die For our sins.
So when you’re teaching your kids
And grandkids about Easter,
Remember it’s OK to
Incorporate the Easter Bunny
Just be sure you teach them
The real reason for Easter.
Praise God He Is Risen Indeed!!
Here is a puzzle for you to do. It’s of the above photo. Below is the link/code for the puzzle. Have Fun.

Trying to figure something for this weeks Sabi Saturday was challenging. Then it hit me, I could do a combined photo of antique and old things. What I mean by this is several old and antique things in one photo.
The end table, lamp and couch are very old. Me I’m “Middle Aged” but 29+. No I’m not telling you how old I am but will just say this, if you read my birthday post last year then you got a pretty good idea already how old I am. The only thing in the picture that’s not that old is Daisy Mae who is only a kitten in this photo but is 12 going on 13. 13 not the that old for a cat but in Cat years she’s old.
I follow Author Anne Greene via her newsletter by email. In her newsletter there are excerpts from her books, excerpts from other author’s books, recipes and book recommendations. NEW ENGLAND BLUEBERRY CAKE
3/4 cup sugar
1/4 cup shortening
1/2 cup milk
2 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups fresh New England blueberries
Blend sugar and shortening on medium speed, add milk and eggs. Reduce speed to low. Sift together flour, baking powder and salt. Add to mixture. Mix only until all flour has been moistened. Fold in blueberries. Spread batter in greased and floured 9-inch square pan.
1/3 cup sifted flour
1/2 teaspoon cinnamon
1/4 cup soft butter
Combine and blend until crumbly. Sprinkle crumb topping over batter. Bake at 350 degrees for 25 to 30 minutes. Also makes 2 dozen muffins.
Spread berries on wax paper and sprinkle a little flour over them. This keeps the berries from settling to the bottom of the cake.
