New England Blueberry Cake

I follow Author Anne Greene via her newsletter by email. In her newsletter there are excerpts from her books, excerpts from other author’s books, recipes and book recommendations.  This recipe is from Anne Greene’s book Recipe For A Husband. I’m sharing this recipe of hers with permission and with her blessing. Below is the Recipe. Enjoy. Please let me know how things go and how it turned out if you make it.

NEW ENGLAND BLUEBERRY CAKE

3/4 cup sugar

1/4 cup shortening

1 egg

1/2 cup milk

2 cups sifted flour

1 teaspoon baking powder

1/2 teaspoon salt

2 cups fresh New England blueberries

 

Blend sugar and shortening on medium speed, add milk and eggs. Reduce speed to low. Sift together flour, baking powder and salt. Add to mixture. Mix only until all flour has been moistened. Fold in blueberries. Spread batter in greased and floured 9-inch square pan.

Crumb Topping

1/3 cup sifted flour

1/2 teaspoon cinnamon

1/4 cup soft butter

Combine and blend until crumbly. Sprinkle crumb topping over batter. Bake at 350 degrees for 25 to 30 minutes. Also makes 2 dozen muffins. 

Hint

Spread berries on wax paper and sprinkle a little flour over them. This keeps the berries from settling to the bottom of the cake.

  1. Mee can Daisy Mae an ‘angel’ Unkell Siddhartha eated yoe-gurt too. Mee onlee has half a little spoon full. Too much wuud give mee tummy ache butt a little iss nice. Not all catss eat yoe-gurt…. Maybee you shuud try sum Daisy Mae….sumthing lite w/out hunks of fruit iss best!

      1. That’s good. Don’t want you sick. By the way, here is my book update on book 2. You and LadyMew are in Ireland and vacationing. Your staying at an Irish Chalet and just invited Queen Queen Mom Crystal, Queen Daisy Mae, Penney and animals to stay with you. You also took them out to eat at a fancy and posh restaurant with a maitre D and private waitress. You’re being very hospitable and having lots of fun.
